In 2016, Hawaiian Commercial & Sugar Company (a subsidiary of Alexander & Baldwin, Inc.) closed the Pu‘unene Sugar Mill located on the island of Maui. I visited in 2013 and was able to capture some of the timeless essence of sugar production on Maui. Outside the museum stand some of the unique machines that were used on the plantation and in the mill. These are the huge cane-crushing rollers which extracted the juice from the harvested cane. The juice was then pumped to the boiling house where water was boiled off. The residual fibers after the juice was extracted is called "bagasse" and was burned to power the mill.
